Creamy Garlic Chicken and Spinach Skillet

2 tablespoons olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

1 cup chicken broth

4 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for added heat)

Salt and freshly ground black pepper to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season both sides of each chicken breast generously with salt, black pepper, and Italian seasoning. This ensures that every bite is flavorful.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the seasoned chicken breasts. Cook for approximately 5-7 minutes on each side, or until they turn golden brown and reach an internal temperature of 165°F (75°C). Once cooked, transfer the chicken to a plate and set it aside.

      Sauté the Aromatics: In the same skillet, without cleaning it, add the chopped onion. Sauté for about 3-4 minutes until the onions are translucent and softened. Then, add the minced garlic and red pepper flakes (if using), and sauté for an additional minute until the garlic is aromatic and lightly golden.

        Create the Creamy Sauce: Carefully pour in the chicken broth, using a wooden spoon to scrape up any flavorful brown bits stuck to the bottom of the skillet. Let it simmer for 2-3 minutes before gradually stirring in the heavy cream. Bring the mixture to a gentle simmer, allowing the flavors to meld together.

          Incorporate Spinach and Cheese: Add the chopped spinach and grated Parmesan cheese to the skillet. Stir everything together and cook for about 2-3 minutes, or until the spinach wilts and the sauce thickens slightly.

            Combine and Finish: Return the cooked chicken breasts back to the skillet, nestling them into the creamy sauce. Allow them to heat through and soak up the sauce for an additional 2-3 minutes. Taste and adjust the seasoning with more salt and pepper if needed.
