Ingredients

1 pound boneless chicken breast, cut into bite-sized pieces

1 tablespoon extra-virgin olive oil

1 medium onion, finely diced

3 cloves of garlic, minced

2 medium carrots, peeled and diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups low-sodium chicken broth

1 cup heavy cream

1 pound potato gnocchi

2 cups fresh spinach (or kale, roughly chopped)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped, for garnish

Grated Parmesan cheese, for serving

Instructions

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced chicken breast to the pot. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned on the outside and cooked through. Remove the chicken from the pot and set it aside on a plate.

Cook the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes, stirring frequently, until the vegetables begin to soften. Add the minced garlic, dried thyme, and dried oregano to the pot. Cook for an additional minute until the garlic is aromatic and lightly golden.

Add Broth and Chicken: Return the cooked chicken to the pot along with any juices it accumulated. Pour in the chicken broth, stirring to combine. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat and allow it to simmer for 15 minutes to let the flavors meld.

Incorporate Gnocchi: Gently stir in the potato gnocchi. Allow the soup to simmer for an additional 3-4 minutes, or until the gnocchi floats to the surface, which indicates they are cooked and ready.

Make it Creamy: Lower the heat to medium-low and slowly pour in the heavy cream, stirring continuously. Let the soup cook gently without coming to a boil for 2-3 minutes. Add the fresh spinach and stir until it wilts, which should take about 2 minutes.

Season and Serve: Taste the soup and season with salt and freshly cracked black pepper to your preference. Use a ladle to serve the soup into individual bowls, then garnish each serving with a sprinkle of freshly chopped parsley and a generous amount of grated Parmesan cheese.

Enjoy: Serve the soup hot, alongside warm crusty bread for a delightful and hearty meal that’s sure to satisfy!
