12 oz fresh or frozen cheese tortellini

1 cup fresh basil leaves, tightly packed

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (or walnuts for a different flavor)

1/2 cup extra virgin olive oil

1 clove garlic, finely minced

Salt and freshly ground black pepper, to taste

1/2 cup heavy cream

Optional: Cherry tomatoes, halved, and extra basil leaves for garnish

Cook the Tortellini: In a large pot, bring salted water to a rolling boil. Add the tortellini and cook according to the package instructions until al dente, usually about 3-5 minutes. Once done, drain the tortellini but be sure to reserve a cup of the pasta water for later use.

    Make the Pesto: In a food processor, place the fresh basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Season with a pinch of salt and pepper. Pulse the ingredients together until they are finely chopped and blended.

      Incorporate Olive Oil: With the processor running at a steady pace, slowly drizzle in the olive oil. Keep processing until the mixture becomes smooth and creamy. Stop to scrape down the sides of the bowl as necessary. Taste the pesto and adjust the seasoning with more salt or pepper to suit your preference.

        Combine Pesto and Cream: Heat a large skillet over medium heat. Add the prepared pesto along with the heavy cream to the skillet. Stir well to incorporate and heat through for about 2-3 minutes, keeping the mixture warm without bringing it to a boil.
