Ingredients

1 pound potato gnocchi

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, diced

1 cup cherry tomatoes, halved

1 teaspoon dried basil

1 teaspoon dried oregano

1 cup heavy cream

1 cup grated mozzarella cheese, plus more for topping

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Cook the Gnocchi: In a large pot, bring salted water to a boil. Carefully add the gnocchi and cook according to package directions until they float, which should take about 2-3 minutes. Once they rise to the surface, drain and set aside.

Sauté Aromatics: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for approximately 3-4 minutes, or until it becomes translucent. Stir in the minced garlic and continue sautéing for another minute until fragrant.

Add Tomatoes and Spices: Incorporate the halved cherry tomatoes along with the dried basil, dried oregano, salt, and pepper into the skillet. Cook for an additional 2-3 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.

Create the Cream Sauce: Lower the heat to a gentle simmer and pour in the heavy cream, stirring well to combine. Allow the mixture to simmer lightly for a minute, letting the flavors meld.

Mix in Cheeses: Add half of the grated mozzarella cheese and all of the grated Parmesan cheese to the skillet. Stir continuously until the cheeses melt and the sauce becomes creamy. Then, gently fold in the cooked gnocchi until they are completely coated in the sauce.

Top with Remaining Cheese: Evenly sprinkle the remaining mozzarella cheese over the top of the gnocchi mixture for an irresistible cheesy finish.

Bake: Carefully transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the cheese top is bubbling and has turned a beautifully golden brown.

Garnish and Serve: Remove the skillet from the oven and let it cool for a few minutes. Garnish generously with fresh basil leaves for a pop of color and flavor. Serve warm and indulge in your comforting, creamy baked gnocchi!
