12 oz pasta (your choice, preferably rotini or penne)

2 ripe avocados, pitted and flesh scooped out

1 cup Greek yogurt (or substitute with sour cream)

1 packet ranch seasoning mix (or homemade blend)

1 clove garlic, finely minced

Juice of 1 lemon, freshly squeezed

Salt and pepper, to taste

1/2 cup cherry tomatoes, halved

1/2 cup corn (fresh or drained canned corn)

1/4 cup fresh cilantro or parsley, finely chopped

Grated Parmesan cheese, for serving (optional)

Olive oil, for drizzling (optional)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions, typically until al dente. Before draining, reserve about 1 cup of the pasta water to adjust the sauce's consistency later. Drain the pasta and set aside.

    Prepare Avocado Ranch Sauce: In a blender or food processor, add the scooped avocado flesh, Greek yogurt, ranch seasoning mix, minced garlic, lemon juice, and a pinch of salt and pepper. Blend the mixture until it is smooth and creamy. If the sauce is too thick for your liking, gradually incorporate some of the reserved pasta water until you achieve your desired creamy consistency.

      Mix the Pasta: Return the drained pasta to the large pot (off the heat). Pour the creamy avocado ranch sauce over the pasta, and gently toss to ensure every piece of pasta is evenly coated. If necessary, mix in additional reserved pasta water to further adjust the sauce's creaminess.
