Ingredients

For the Muffins:

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

1/2 cup unsweetened applesauce

1/2 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1 1/2 cups fresh cranberries (or frozen, thawed)

1 large apple, peeled and diced (approximately 1 cup)

For the Crumble Topping:

1/2 cup rolled oats

1/3 cup all-purpose flour

1/4 cup packed brown sugar

1/2 teaspoon ground cinnamon

3 tablespoons cold butter, diced

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup.

Mix the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, rolled oats, baking powder, baking soda, salt, and ground cinnamon until well combined.

Combine the Wet Ingredients: In a separate bowl, beat the brown sugar, granulated sugar, and egg together until smooth and well blended. Stir in the applesauce, milk, and vanilla extract until the mixture is fully integrated.

Incorporate the Mixtures: Gradually fold the wet mixture into the bowl of dry ingredients using a spatula, mixing gently until just combined. Avoid overmixing! Carefully fold in the cranberries and diced apple until they are evenly distributed throughout the batter.

Prepare the Crumble Topping: In a small bowl, mix the rolled oats, all-purpose flour, brown sugar, and ground cinnamon. Add the cold diced butter and mix with your fingers or a fork until the mixture resembles coarse crumbs.

Fill the Muffin Cups: Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about two-thirds full. Generously sprinkle the crumble topping over each muffin until well covered.

Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Cool and Serve: Once baked, allow the muffins to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely. These muffins can be enjoyed warm or at room temperature!
