Cold Pasta Salad with Hummus Dressing

8 oz. whole grain pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (any color)

1 cup cooked chickpeas, drained and rinsed

1/2 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

Salt and black pepper, to taste

For the Hummus Dressing:

1/2 cup plain hummus

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

1 teaspoon ground cumin

1 tablespoon water (add more as needed for desired consistency)

Salt, to taste

Cook the Pasta: In a large pot, fill it with water and add a generous pinch of salt. Bring the water to a rolling boil. Add the pasta, cooking according to package directions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and rinse it under cold running water to halt the cooking process. Set the cooled pasta aside in a large mixing bowl.

    Prepare the Vegetables: While the pasta cooks, wash and chop the cherry tomatoes, cucumber, bell pepper, and red onion. Add these colorful veggie pieces to the bowl with the cooled pasta, along with the drained chickpeas and chopped parsley for a fresh herbal touch.

      Make the Dressing: In a separate medium bowl, combine the plain hummus, olive oil, fresh lemon juice, garlic powder, ground cumin, and water.
