1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, peeled and thinly sliced

1 cup Greek yogurt or dairy-free yogurt

2 tablespoons tahini

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1/2 cup fresh parsley, finely chopped

1/4 cup red onion, finely diced (optional)

1/4 teaspoon smoked paprika (optional)

Prepare the Chickpea Mixture: In a medium-sized mixing bowl, use a fork or potato masher to roughly smash the drained chickpeas. Aim for a chunky consistency rather than a smooth paste, ensuring some whole chickpeas remain for texture.
