Classic Shrimp Fried Rice

2 cups cooked jasmine rice (preferably day-old for optimal texture)

1 lb large shrimp, peeled and deveined

2 tablespoons vegetable oil (divided)

2 large eggs, lightly beaten

1 cup mixed vegetables (peas, diced carrots, and sweet corn)

3 green onions, sliced (white parts and green tops separated)

2-3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper, to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Shrimp: Start by seasoning the shrimp with a light pinch of salt and pepper. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

    Cook the Shrimp: Add the seasoned shrimp to the skillet in a single layer. Stir-fry them for about 2-3 minutes or until they turn pink and opaque. Once fully cooked, remove the shrimp from the skillet and set them aside on a plate.

      Scramble the Eggs: In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, pour in the beaten eggs. Allow them to sit for a few moments before gently scrambling with a spatula until fully cooked. Transfer the scrambled eggs to the plate with the shrimp.

        Sauté Aromatics: With the oil still hot, add the minced garlic and the sliced white parts of the green onions to the skillet. Sauté for about 30 seconds, stirring frequently, until the garlic is fragrant and lightly golden.

          Add the Vegetables: Toss in the mixed vegetables and stir well. Continue to cook for 2-3 minutes, stirring often, until the veggies are heated through and tender.
