1 cup granulated sugar

2 cups water

Prepare the Simple Syrup: In a medium saucepan, combine the water and granulated sugar. Place over medium heat and stir occasionally until the sugar fully dissolves, which should take 2-3 minutes. Once dissolved, remove the saucepan from heat and set it aside to cool.

    Juicing and Zesting the Lemons: While your syrup cools, zest the lemons using a microplane or a zesting tool, being careful to only grate the bright yellow outer layer and avoid the bitter white pith beneath. After zesting, juice the lemons until you yield 2 cups of fresh lemon juice.

      Mixing the Ingredients: In a large mixing bowl, combine the cooled syrup, fresh lemon juice, lemon zest, and a pinch of salt. Stir the mixture thoroughly until all components are well combined.
