1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1/2 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

12 small flour tortillas or 6 larger tortillas, cut into quarters

Cooking spray or olive oil for greasing

Optional toppings: sour cream, guacamole, chopped cilantro, sliced jalapeños, or shredded lettuce

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C). Lightly grease a muffin tin by spraying it with cooking spray or brushing it with olive oil to prevent sticking.

    Cook the Ground Beef: In a large skillet set over medium heat, add the ground beef along with the chopped onion. Cook for approximately 5-7 minutes, using a spatula to break the meat into smaller pieces, until it is fully browned. Stir in the minced garlic and sauté for an additional minute until fragrant.

      Season the Beef Mixture: Add the taco seasoning and diced tomatoes to the skillet, mixing thoroughly. Continue to cook for another 2-3 minutes, allowing the flavors to combine. Remove the skillet from the heat and let the mixture cool for a few minutes.

        Prepare the Tortilla Shells: If using larger tortillas, cut them into quarters. Take each tortilla piece and gently press it into the cups of the greased muffin tin to form a sturdy shell.

          Fill the Taco Cups: Spoon the seasoned ground beef mixture into each tortilla shell, filling them about three-quarters full. Top each filled cup generously with a mix of shredded cheddar and mozzarella cheese.

            Bake the Taco Cups: Carefully place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the cheese is melted, bubbly, and the edges of the tortillas are beautifully golden brown.
