1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

1 cup red or gold potatoes, diced (optional for extra heartiness)

1 teaspoon dried thyme (or 1 tablespoon fresh)

1 teaspoon dried rosemary (or 1 tablespoon fresh)

1 cup chicken broth

1 cup heavy cream

For the Cheese Mixture:

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1 tablespoon Dijon mustard (optional for tanginess)

For the Topping:

1/2 cup panko breadcrumbs

2 tablespoons melted butter

1/4 cup shredded cheese of your choice (optional for extra cheesiness)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne or rotini pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and drizzle with olive oil to prevent sticking. Set aside.

    Prepare the Chicken: In a large skillet or Dutch oven over medium heat, add a splash of olive oil. Season the diced chicken breasts with salt and pepper. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the diced onion, carrots, and minced garlic. Sauté for about 4-5 minutes or until they become softened and fragrant. Stir in the thyme, rosemary, and diced potatoes (if using). Cook for an additional 3-4 minutes, allowing the flavors to meld.
