Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup sliced salami

1 cup diced prosciutto

1 cup cheese (such as Gruyère or sharp cheddar), shredded

½ cup pitted Kalamata olives, halved

½ cup cherry tomatoes, halved

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

2 tablespoons balsamic glaze (optional for drizzling)

Instructions

Prepare the Chicken: Start by seasoning both sides of the chicken breasts with smoked paprika, garlic powder, salt, and pepper. Make sure to evenly coat the chicken to enhance its flavor.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once the oil shimmers, carefully add the seasoned chicken breasts. Sear the chicken for approximately 5-7 minutes per side, or until they develop a golden brown crust and are fully cooked through (the internal temperature should reach 165°F or 75°C). After cooking, transfer the chicken to a plate and let it rest.

Sauté the Charcuterie: Keeping the heat at medium, add the sliced salami and diced prosciutto to the same skillet. Sauté the meats for about 2-3 minutes until they become slightly crispy, allowing their rich flavors to infuse into the skillet.

Add the Vegetables: Stir in the halved Kalamata olives and cherry tomatoes. Cook everything together for an additional 3-4 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices, adding a burst of flavor to the dish.

Combine and Melt: Lower the heat to low. Return the cooked chicken to the skillet, placing it among the charcuterie and vegetables. Evenly sprinkle the shredded cheese over everything, then cover the skillet with a lid. Let it sit for about 2-3 minutes, or until the cheese has melted and become bubbly.

Finish with Herbs: Once the cheese is melted, sprinkle the chopped fresh rosemary over the top of the skillet for an aromatic finish that enhances the overall flavor of the dish.

Serve: Slice the chicken breasts into pieces and serve them directly from the skillet for a rustic touch. Drizzle with balsamic glaze if desired. This dish pairs wonderfully with a fresh salad or some crusty bread for a delightful meal.
