Instructions

Preheat the Oven: Set your oven temperature to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and lightly flouring them to ensure the cakes release easily.

Mix Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until well combined. Set this mixture aside.

Cream Butter and Sugars: In a large mixing bowl, using an electric mixer on medium speed, cream together the softened butter, granulated sugar, and brown sugar. Beat this mixture for about 3-4 minutes until it's light, airy, and fluffy.

Incorporate Eggs and Pumpkin: Add the eggs one at a time to the butter-sugar mixture, ensuring to beat well after each addition. Then, mix in the pumpkin puree and the cooled espresso until thoroughly combined. Finally, stir in the vanilla extract.

Combine Wet and Dry Mixtures: Gradually fold the dry ingredient mixture into the wet ingredients. Mix gently until everything is just combined, being careful not to overmix, as this can lead to a dense cake.

Bake the Cakes: Evenly divide the batter between the two prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in their pans for about 10 minutes before transferring them to wire racks to cool completely.

Prepare the Caramel Frosting: In a clean mixing bowl, beat the softened butter using an electric mixer until it's creamy. Gradually add in the powdered sugar, mixing on low speed until just combined. Then incorporate the caramel sauce, heavy cream, salt, and vanilla extract. Beat the mixture on medium-high speed for 3-4 minutes until the frosting is fluffy and light. If needed, adjust the consistency with more cream or powdered sugar.

Assemble the Cake: Once the cakes are fully cooled, place one layer on a serving plate. Generously spread caramel frosting over the top of the first layer. Carefully place the second layer on top, then use the remaining frosting to frost the top and sides of the entire cake.

Add the Final Touches: Drizzle additional caramel sauce over the top of the frosted cake for an enticing finish. If you like, add dollops of whipped cream as a delightful garnish.

Serve and Enjoy: Slice your gorgeous Caramel Pumpkin Latte Cake and serve it to your friends and family for smiles all around! Pair this delectable treat with a hot cup of coffee or tea for the ultimate cozy experience.
