2 tablespoons rice vinegar

1 tablespoon sugar

1/2 teaspoon salt

1 cup cherry tomatoes, halved

1 cucumber, sliced into sticks

1 small carrot, julienned

1/2 bell pepper, sliced into thin strips

For the Protein:

3 oz grilled chicken breast, sliced (or tofu for a vegetarian option)

1 tablespoon soy sauce (optional for tofu)

For Fruit & Nuts:

1 cup mixed berries (such as strawberries, blueberries, and raspberries)

1 small apple, cored and sliced

1/2 cup mixed nuts (almonds, walnuts, pistachios)

1 tablespoon honey (for drizzling, optional)

For Garnish:

Fresh mint leaves (optional)

Prepare the Sushi Rice: Start by rinsing the sushi rice under cold water in a fine-mesh sieve until the water runs clear to eliminate excess starch. Combine the rinsed rice and 2 1/2 cups of water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let the rice steam in the cooker for an additional 10 minutes to ensure perfect texture.

    Season the Rice: In a small saucepan over low heat, combine the rice vinegar, sugar, and salt. Stir until the sugar and salt are completely dissolved. After the rice has finished steaming, transfer it to a large mixing bowl. Drizzle the vinegar mixture evenly over the warm rice, using a spatula to gently fold it in without smashing the grains. Allow the rice to cool slightly.

      Shape the Rice Balls: When the rice is cool enough to handle, wet your hands with water to prevent sticking. Take a handful of rice (approximately the size of a golf ball) and mold it into a ball or triangular shape. If desired, wrap the shaped rice with a small piece of nori for added flavor and fun.

        Prepare the Veggies: While the rice cools, wash and slice your chosen vegetables. Halve the cherry tomatoes, cut the cucumber into sticks, julienne the carrot, and slice the bell pepper into thin strips. Arrange them all on a large plate for easy assembly.

          Grill the Protein: For grilled chicken, season the breast with salt and pepper. Grill it in a skillet over medium heat for about 6-7 minutes on each side or until fully cooked. Allow it to rest briefly before slicing into bite-sized pieces. If using tofu, marinate the slices in soy sauce for 15 minutes before grilling until golden and firm, then slice.

            Assemble the Bento Box: In your bento box, start by placing one rice ball in one compartment. Neatly arrange the sliced chicken or tofu, assorted veggies, mixed berries, and apple slices in the other compartments. Sprinkle a handful of mixed nuts on top for added crunch. If you're using honey, drizzle it over the fruit for a touch of sweetness.

              Garnish: Add a few fresh mint leaves on top of the bento box to enhance the presentation and infuse a refreshing aroma.
