Baked Ranch Chicken Alfredo Pasta

1 lb (450g) penne pasta

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 packet (1 oz) ranch dressing mix

Salt and freshly ground black pepper, to taste

3 cups heavy cream

1 cup freshly grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 cup shredded mozzarella cheese

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to prepare for baking later.

    Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente, usually about 10-12 minutes. Once cooked, drain the pasta and set it aside.

      Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and season it with salt, pepper, and ranch dressing mix. Sauté the chicken for approximately 7-10 minutes, stirring occasionally, until it’s fully cooked and golden brown on the outside. Once done, remove the skillet from heat and set the chicken aside.

        Prepare the Alfredo Sauce: Using the same skillet, pour in the heavy cream and bring it to a gentle simmer over medium heat. Gradually stir in the grated Parmesan cheese, garlic powder, and onion powder. Continue stirring until the cheese is completely melted and the sauce is creamy and smooth. Taste the sauce and adjust the seasoning with salt and pepper if desired.

          Combine Pasta and Chicken: In a large mixing bowl, combine the cooked penne pasta with the sautéed chicken. Pour the creamy Alfredo sauce over the mixture and toss gently until every piece of pasta is well coated with the sauce.
