200g block of feta cheese

2 cups cherry tomatoes, halved

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for spice)

2 cups cooked rice (choose from white, brown, or cauliflower rice)

1 cup fresh spinach or arugula

½ cup Kalamata olives, pitted and halved

Fresh basil or parsley, roughly chopped for garnish

1 lemon, zested and juiced

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's hot and ready for the dish.
