Ingredients

For the Cauliflower:

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or substitute with gluten-free flour)

1 cup whole milk (or use a non-dairy milk of your choice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and black pepper to taste

For the Buffalo Sauce:

½ cup of your preferred hot sauce (like Frank's RedHot)

4 tablespoons unsalted butter (or plant-based vegan butter)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

For Serving:

Slider buns (opt for whole grain or gluten-free)

Fresh lettuce leaves (for garnish)

Sliced pickles (optional, for added crunch)

Ranch or blue cheese dressing (optional, for drizzling)

Instructions

Preheat the Oven: Begin by preheating your oven to 450°F (230°C). Prepare a baking sheet by lining it with parchment paper for easy clean-up.

Create the Battering Mixture: In a large mixing bowl, combine the all-purpose flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk together until the mixture is smooth and well-combined, ensuring there are no lumps.

Coat the Cauliflower: Take each cauliflower floret and dip it into the batter, making sure it is fully submerged and coated. Gently shake off any excess batter before placing the florets in a single even layer on the prepared baking sheet.

Bake the Cauliflower: Transfer the baking sheet to the preheated oven and bake for 25-30 minutes. Keep an eye on it, and halfway through the baking time, turn the florets to ensure an even golden-brown and crispy texture.

Prepare the Buffalo Sauce: While the cauliflower is baking, melt the butter in a small saucepan over medium heat. Once melted, add the hot sauce, apple cider vinegar, and smoked paprika. Stir the mixture well and keep it on low heat to warm it up without boiling.

Combine Cauliflower and Buffalo Sauce: Upon completion of the baking, remove the cauliflower from the oven and place it into a large mixing bowl. Carefully pour the warm Buffalo sauce over the baked florets, tossing gently to ensure that every piece is evenly coated with the spicy sauce.

Assemble the Sliders: Cut the slider buns in half horizontally. On the bottom half of each bun, place a generous amount of the Buffalo cauliflower. Top it with a fresh lettuce leaf and add sliced pickles, if desired. Drizzle with ranch or blue cheese dressing for an extra layer of flavor, then cap with the top half of the bun.

Serve Warm and Enjoy: Serve the sliders immediately while they’re warm and crispy. Pair them with your favorite side dishes or a refreshing salad for a complete meal!
