2 ripe avocados

1 lb (450g) ground chicken

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup shredded cheese (choose between cheddar or mozzarella for a creamy texture)

1/4 cup green onion, finely chopped

1 tablespoon garlic powder

1 teaspoon smoked paprika for a hint of depth

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten (to bind the mixture)

Cooking spray or olive oil for greasing

Lime wedges, for serving (adds a zesty finish)

Instructions
 

Preheat the Oven: Set your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with cooking spray to prevent sticking.

    Prepare the Avocados: Carefully cut the avocados in half lengthwise and remove the pits. Using a spoon, scoop out approximately 1/4 of the flesh from each half to create ample space for the filling. Set the scooped avocado flesh aside to incorporate into the filling later.

      Make the Filling: In a large mixing bowl, combine the ground chicken, breadcrumbs, shredded cheese, finely chopped green onion, garlic powder, smoked paprika, salt, black pepper, and the reserved avocado flesh. Use a fork or spoon to mix everything thoroughly until all ingredients are well combined.

        Incorporate the Egg: Gradually pour the beaten egg into the chicken mixture while stirring. This will help bind the mixture together. If the filling feels too moist, feel free to add a little more breadcrumbs to achieve the desired consistency.

          Stuff the Avocados: With the help of a spoon, generously fill each avocado half with the chicken mixture, pressing down gently to pack it well. Place the stuffed avocados upright on the prepared baking sheet.
