Ingredients

2 cups rolled oats

1 cup whole wheat flour

1 cup unsweetened applesauce

1 cup diced apples (approximately 2 medium apples, peeled and cored)

½ cup honey or maple syrup (your choice for sweetness)

½ cup packed brown sugar

1/3 cup unsweetened almond milk (or any milk you prefer)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

Optional: ½ cup chopped walnuts or pecans, or plump raisins for added texture

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by greasing it with butter or non-stick spray, or line it with parchment paper for easy removal later.

Combine the Dry Ingredients: In a large mixing bowl, thoroughly combine the rolled oats, whole wheat flour, ground cinnamon, baking powder, baking soda, and salt. If you opt to include nuts or raisins for extra texture, fold them into the dry mixture at this stage.

Mix the Wet Ingredients: In another bowl, whisk together the unsweetened applesauce, honey (or maple syrup), packed brown sugar, almond milk, and vanilla extract until the mixture is smooth and homogenous.

Combine the Mixtures: Pour the wet ingredient mixture into the bowl with the dry ingredients. Stir well until all components are completely combined. Gently fold in the diced apples, making sure they are evenly distributed throughout the batter.

Pour into Baking Dish: Transfer the batter into the prepared baking dish, using a spatula to spread it out evenly in the corners and edges.

Bake: Place the baking dish in the preheated oven and bake for 28-32 minutes. The squares are ready when the top is a lovely golden brown, and a toothpick inserted into the center comes out clean.

Cool and Slice: After baking, remove the dish from the oven and allow it to cool for approximately 10-15 minutes. If you used parchment paper, you can lift the entire square out of the dish; otherwise, simply cut it into squares directly in the dish.

Serve: Enjoy these delightful Apple Oatmeal Squares warm or at room temperature. They make a fantastic option for breakfast, a nutritious snack, or a wholesome dessert!
