Ingredients

1 lb chicken tenders

1 cup almond flour

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon freshly cracked black pepper

2 large eggs

2 tablespoons Dijon mustard

1 tablespoon honey

Sea salt, to taste

Cooking spray or extra virgin olive oil for baking

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). To prepare your baking sheet, line it with parchment paper for easy cleanup, or lightly coat it with cooking spray.

Prepare the Coating: In a medium mixing bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and a pinch of sea salt. Stir well until all dry ingredients are thoroughly blended.

Create the Egg Mixture: In a separate bowl, crack the eggs and whisk them together with Dijon mustard and honey until the mixture is smooth and well-combined. This will act as a binding agent to help the almond coating stick to the chicken tenders.

Coat the Chicken: Take each chicken tender and dip it into the egg mixture, ensuring it is completely covered while allowing any excess to drip off. Next, roll the tender in the almond flour mixture, pressing gently to make sure it is fully coated. Place the coated chicken tender onto the prepared baking sheet. Repeat this process for the remaining chicken tenders.

Bake the Chicken: Lightly spray the tops of the chicken tenders with cooking spray or drizzle them with a bit of extra virgin olive oil for added crispiness. Place the baking sheet in the preheated oven and bake for 15-20 minutes. The chicken is done when it reaches an internal temperature of 165°F (75°C), and the coating is a beautiful golden brown. For even cooking, you can flip the tenders halfway through the baking time.

Serve: Once baked, remove the chicken tenders from the oven and let them cool for about 5 minutes. Serve warm with your favorite dipping sauces such as honey mustard, a zesty yogurt dip, or even a homemade ranch.
