Ingredients

4 medium bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup marinara sauce (plus extra for topping)

1 cup shredded mozzarella cheese (divided)

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature while you prepare the peppers.

Prepare the Peppers: Carefully slice the tops off the bell peppers and remove the seeds and membranes inside. Gently brush the outer surfaces with olive oil for added flavor and moisture. Place the peppers in a baking dish, standing upright with the cut sides facing up.

Cook the Turkey Mixture: In a large skillet, heat a splash of olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes, or until it becomes translucent. Add the minced garlic to the skillet and sauté for an additional minute, allowing the flavors to meld. Next, add the ground turkey, breaking it apart with a spatula. Cook for 5-7 minutes, or until the turkey is browned and fully cooked.

Add Spinach and Seasonings: Stir the chopped spinach into the turkey mixture, along with the cooked quinoa (or rice), Italian seasoning, paprika, salt, and black pepper. Mix everything well and continue to cook for another 2-3 minutes until the spinach is wilted and incorporated.

Incorporate Marinara Sauce: Remove the skillet from heat and add 1 cup of marinara sauce along with ½ cup of shredded mozzarella cheese. Stir until all ingredients are evenly combined.

Stuff the Peppers: Using a spoon, generously fill each bell pepper with the turkey and spinach mixture. Drizzle a bit of extra marinara sauce over the top of each stuffed pepper, then sprinkle the remaining mozzarella cheese evenly on top.

Bake: Cover the baking dish with aluminum foil to prevent drying out. Place it in the preheated oven and bake for 20 minutes. After 20 minutes, remove the foil and continue to bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once baked, remove the stuffed peppers from the oven and allow them to cool for a few minutes. Garnish with fresh basil leaves for a pop of color and flavor before serving.

                  Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4

Presentation Tips: Serve the stuffed peppers on a vibrant platter, drizzling more marinara sauce around the base for a beautiful presentation. Consider adding extra basil leaves for a fresh touch!
