8 ounces rotini pasta

1 tablespoon olive oil

1 medium onion, diced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) diced tomatoes with green chilies, undrained

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup chicken broth

1 cup shredded cheddar cheese

1/2 cup sour cream

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and set it aside in a large bowl.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and cook for approximately 3-4 minutes, or until the onion becomes translucent and aromatic. Stir in the minced garlic and sauté for an additional minute, allowing the garlic to infuse its flavor into the oil.
