Ingredients

For the Shrimp:

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

Juice of 1 lime

For the Cilantro Lime Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1/2 cup carrots, julienned

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons mayonnaise (or Greek yogurt for a healthier option)

1 teaspoon honey

Salt and black pepper, to taste

For Assembly:

8 small corn or flour tortillas

Avocado slices (optional)

Lime wedges, for serving

Instructions

Prepare the Cilantro Lime Slaw: In a large mixing bowl, combine the finely shredded green and red cabbage, julienned carrots, and chopped cilantro. In a separate small bowl, whisk together the lime juice, mayonnaise (or Greek yogurt), honey, salt, and black pepper to create a dressing. Pour the dressing over the cabbage mixture and toss thoroughly to ensure all ingredients are evenly coated. Set aside to allow the flavors to blend.

Season the Shrimp: In a medium bowl, place the peeled and deveined shrimp. Drizzle with olive oil, then sprinkle with chili powder, ground cumin, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Squeeze the juice of 1 lime over the shrimp and toss until they are evenly coated in the spices.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once the skillet is hot, add the seasoned shrimp in a single layer. Cook for approximately 2-3 minutes on each side, or until the shrimp are pink, opaque, and cooked through. Remove from heat and set aside.

Warm the Tortillas: While the shrimp is cooking, warm the tortillas. You can either place them in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in aluminum foil and place in a preheated oven until warm.

Assemble the Tacos: Lay the warmed tortillas on a serving platter. Evenly distribute the cooked shrimp among the tortillas. Generously top each taco with the cilantro lime slaw. If desired, add avocado slices for an extra creamy texture.

Serve: Serve the tacos immediately, garnished with additional lime wedges to squeeze over the top for added zest. Enjoy!

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 servings

                - Presentation Tips: Arrange the tacos on a colorful platter, and provide extra lime wedges on the side for squeezing. You can also sprinkle some additional cilantro on top for a fresh pop of color.
