Ingredients

1 lb boneless, skinless chicken breasts, thinly sliced

2 cups broccoli florets

1 red bell pepper, sliced into strips

1 carrot, julienned

3 cloves garlic, minced

1-inch piece ginger, finely grated

3 tablespoons soy sauce

2 tablespoons oyster sauce (optional, for added flavor)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening sauce)

Salt and pepper to taste

Cooked rice or noodles, for serving

Sesame seeds and chopped green onions for garnish

Instructions

Prep the Ingredients: Begin by thinly slicing the chicken breasts into strips. Wash the broccoli, breaking it into small florets. Slice the red bell pepper into strips and julienne the carrot. Mince the garlic and finely grate the ginger.

Marinate the Chicken: In a medium-sized bowl, combine the sliced chicken with 1 tablespoon of soy sauce and a pinch of salt and pepper. Mix well, allowing the chicken to marinate while you prepare the vegetables, letting the flavors infuse.

Heat the Wok: Heat a large non-stick wok or skillet over medium-high heat, then add the vegetable oil. Once the oil is shimmering, add the marinated chicken and stir-fry for approximately 5-7 minutes, or until the chicken is golden brown and fully cooked. Once done, remove the chicken from the wok and set aside on a plate.

Stir-Fry the Vegetables: In the same wok, pour in the sesame oil. Add the minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant. Then, add the broccoli florets, sliced red bell pepper, and julienned carrot. Stir-fry the vegetables for 3-4 minutes until they are bright in color yet still slightly tender.

Combine and Sauce: Return the cooked chicken to the wok with the vegetables. Pour in the remaining soy sauce and the oyster sauce (if you're using it). Stir everything well to combine. If you prefer a thicker sauce, slowly incorporate the cornstarch mixture, stirring constantly until the sauce thickens, which should take about 1 minute.

Finish and Serve: Taste your stir-fry for seasoning and adjust with more soy sauce, salt, or pepper if necessary. Once everything is heated through and well-combined, remove the wok from heat. Serve the chicken and vegetable stir-fry over warm cooked rice or noodles, and top generously with sesame seeds and chopped green onions for an added touch of freshness.
