1 cup quinoa, rinsed thoroughly

2 cups vegetable broth (or water)

2 cups fresh broccoli florets (or use frozen broccoli, thawed)

1 cup shredded sharp cheddar cheese (plus extra for topping)

1/2 cup cream cheese, softened to room temperature

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for added heat)

1/4 cup breadcrumbs (for topping)

Fresh parsley or chives for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so it’s hot and ready when your dish is assembled.

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa with the vegetable broth. Bring the mixture to a vigorous boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the quinoa is light and fluffy and all the liquid is absorbed. After cooking, remove from the heat and let it sit, covered, for an additional 5 minutes to finish the steaming process.

      Blanch the Broccoli: While the quinoa cooks, bring a small pot filled with salted water to a rapid boil. Add the broccoli florets and blanch them for 2-3 minutes until they are vibrantly green and retain a slight crunch. Drain the broccoli and immediately transfer it to a bowl filled with ice water to halt the cooking. After a few minutes, drain again and set aside.

        Prepare the Cheese Mixture: In a large mixing bowl, combine the cooked quinoa with the softened cream cheese, shredded cheddar cheese, grated Parmesan cheese, eggs, garlic powder, onion powder, salt, black pepper, and optional red pepper flakes. Mix with a spoon or spatula until all ingredients are thoroughly blended.

          Incorporate the Broccoli: Gently fold the blanched broccoli into the quinoa-cheese mixture, being careful to keep the broccoli florets intact while ensuring they are evenly distributed throughout the mixture.

            Transfer to Baking Dish: Lightly grease a 9x9-inch (or similar-sized) baking dish with cooking spray or olive oil. Pour the quinoa and broccoli mixture into the prepared dish, spreading it evenly to create a flat layer.
